Recipe : Vietnames Rice Paper Rolls with Peanut Sauce
Vietnamese rice paper rolls are one of those things that people see and go “Hey, I LOVE those!” and yet it’s the sort of thing they don’t tend to try to actually make.
Once you get the hang of it, they really are a snap to stuff and roll and when you think about it, they’re perfect to make for or bring to a party, as they cater to virtually all dietary requirements – depending on what you stuff them with and it can be anything you like – thinly sliced red pepper, pea pods, lettuce, crab meat, shrimp, blanched asparagus, bean sprouts, chives, jicama, mango, shreds of leftover cooked chicken or pork. They’re vegetarian (easily vegan, even), gluten free, egg free, dairy free, low in fat and calories. They’re well worth learning how to make.
The key is to soak rice papers until they’re pliable then pat them dry so that they stick to themselves when you roll them up. All the measurements are approximate – you just need enough filling to stuff as many rolls as you want to make.
And make lots of peanut sauce. It’s great to keep in the fridge and toss over cold spaghetti, shrimp, leftover roast pork or chicken and whatever fresh veg you have on hand – cucumbers, pea pods, asparagus, broccoli slaw.
Vietnamese Rice Paper Rolls
Ingredient :
- 15 small-medium rice paper wrappers
- Filling:
- 100 g (3 1/2 oz) thin rice vermicelli noodles (about a handful)
- 1 Tbsp. rice vinegar
- 1 large carrot, peeled and shredded
- 15 cooked shrimp, peeled and deveined
- Half cucumber, peeled if necessary and cut into thin sticks
- Small handful fresh cilantro, mint or thai basil leaves, torn up or left whole
- 1/4 cup chopped peanuts (optional)
How to cook :
- To prepare the filling, place noodles in a bowl of boiling water and let stand for about 3 minutes or as package directs to soften.
- Drain well and place in a medium bowl.
- Add carrot and rice vinegar and toss to combine.
- Cut the shrimp lengthwise in half.
- To assemble the rolls, fill a shallow dish (I use a pie plate) with hot water and lay a clean tea towel over your work surface.
- Soak one rice paper round at a time in the water for about 10 seconds until it’s pliable and lay it on the tea towel.
- Pat the surface with the edges of the towel to absorb any excess water.
- Place two shrimp halves (cut side up so you can see the pink through the wrapper), a stick of cucumber and some noodles down the middle of the round.
- Sprinkle with cilantro and peanuts.
- Fold over one long side to cover then fold up both ends.
- Roll the whole thing up as tightly as you can without tearing the wrapper.
Peanut Sauce
Use more or less broth to make this sauce as thick or thin as you like. If you like coconut flavor in your peanut sauce, add a teaspoon of coconut extract instead of coconut milk which is high in saturated fat.
- 1/4 - 1/2 cup light or regular peanut butter
- 3 Tbsp. soy sauce
- 2 Tbsp. brown sugar or honey
- 2 Tbsp. rice vinegar or lime juice
- 1-2 cloves garlic, crushed
- 1-2 tsp. grated fresh ginger
- 1 tsp. sesame oil (optional)
- 1/4 – 1/2 tsp. curry paste (optional)
Combine all the ingredients in a blender or jar and whiz or shake until smooth. Refrigerate until you need it.

It's time for Bowling ♥
LOVE - as though you have never been hurt before,
do what you love.
LIVE - as though heaven is on earth.
Hello October!
This little saying is my LIVE theme for the month. It's felt very appropriate for what's been going on. Just a little update on life (and I really mean little).
I'm going to the tournament bowling tomorrow!GOSH! I didn't noticed anything. My lecturer just call me yesterday and said 'Afiqah, this Sunday our Poly got event for bowling and each department must sent 4student and I choose you!'
OMGG!!
I must practice, practice and practice! since I'm quiet long leave this game last year (I mean, dah lama tak enter any tournament). Anyway, I really been having a lot of fun!
I got the most amazing partner for this game. It's gorgeous! Actually, I didn't know that lady but she from other course, same like 3 else. Awww, I'm really excited!
Hopefully our department can win! That's about it, I'm going to go start practice for the bowling now!Labels: BLOG MENDAP.A.K.A.EQA, HIDUPSAYA, HOBBIES

For this loaf, I used grated raw sweet potato and chopped walnuts. You could alternatively bake the batter as muffins, prepare as directed then divide among 12 greased or paper-lined muffin cups and bake at 400°F for 20 to 30 minutes.
Ingredient :
- 2 cups all-purpose flour (I use half whole wheat, half all-purpose)
- 1 cup sugar
- 1 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/4 cup butter, cold and cut into pieces
- 3/4 cup orange or apple juice or milk
- grated zest of an orange or lemon
- 1 egg
- 1 cup any raw fruit or vegetable like small berries left whole, anything else peeled and grated or chopped (I used grated sweet potato)
- 1/2 cup chopped walnuts or pecans
How to make :
- Preheat the oven to 350°F. Grease a 9 x 5-inch loaf pan with butter.
- In a large bowl, stir together the dry ingredients.
- Cut the butter into the dry ingredients using a fork, pastry blender or your fingers until there are no pieces bigger than a small pea. (You can use a food processor for this step, which makes it quite easy but you should not use a food processor for the remaining steps or the bread will be tough.)
- In another bowl whisk together the juice, zest and egg. Pour into the dry ingredients and stir with a spatula just enough to moisten, do not beat and do not mix until the batter is smooth.
- Fold in the fruit and the nuts then pour and spoon the batter into the loaf pan.
- Bake for about an hour or until the bread is golden and a toothpick inserted in the center comes out clean.
- Cool on a rack for 15 minutes before removing from the pan. Makes 1 loaf.

Decorate

Here’s a heart and soul warmer for the cloudy days we’ve been having here in the Northeast. Malaysian singer/songwriter Yuna has a new lo-fi video out to her song “Decorate”. It’s a beautiful song, it’s short and sweet and the video is slightly reminiscent of Coldplay‘s “Yellow” and the short film “La Jetee” by Chris Marker.
I had a listen to her 2nd album, Decorate and
I was left in Awww!!
One word can described this album, awesomely beautiful!
I bought it and one word from me : J'ADORE!
Decorate consists of 10 tracks.
1. Gadis Semasa
2. These Streets
3. Penakut
4. Fireworks
5. Random Awesome
6. Rocket
7. Permission
8. Cinta Sempurna
9. Decorate
10. super something & Dan Sebenarnya
The most I like is Random Awesome because back to being sober! Random awesome is just awesome (period). The melody in this one is just happily breathtaking yet simple.
Its talks about falling in love and keeping it in between themselves. It expresses the beauty and thrill of finding new love perfectly. This is one of those songs that just makes you want to smile quietly.
It all began
At the show one weekend
I was a friend of your cousin said
"hey how you've been"
And with your checkered shirt on
And my Reebok shoes on
Let's watch something random
Turned to something awesome
And I smile I love no,
I laugh happier somehow
No I don't know what is up with me
I laugh too much recently
No, They don't know much about us
When we're exchanging glances
We'll figure out one day,
What happened on your 24th birthday
It all began with a simple
Confession
You had an urge to kiss me and
I was on the verge to miss you
And it happen,
No
We don't understand
No
I won't even budge
Before we didn't hang out much
So save me in your playlist
So,
You wont forget this
And if this don't quite go your way
You'll still have me on replay
With your checkered shirt on
And my Reebok shoes on
Let's watch something random
Turned to something awesome
And I smile I love no,
I laugh happier somehow
No I don't know what is up with me
I laugh too much recently
No, They don't know much about us
When we're exchanging glances
We'll figure out one day,
What happened on your 24th birthday
